These are the blue agave spirit in its purest form. Blanco is crystal clear and typically un-aged, where the natural sweetness and presence of the agave are prominent.

The first stage of “rested“ tequilas. The tequila is aged in wood barrels between 2 and 11 months. The taste becomes a good balance between the agave and wood flavors.

Anejos

These tequilas have been aged between 1 and 3 years in American or French oak. This aging process darkens the tequila to an amber color, and the flavor becomes richer, smoother and more complex.

Mezcal

These are the original agave/sotol spirits, before the innovation of tequila. Mezcal, sotol, raicilla and bacanora are the most complex, unique and diverse of the Mexican spirits. Long roasting of the diverse agave piñas imparts a smoky, rich and lingering flavor. Neat mezcal served with traditional citrus and sal de gusano.
